Malhadinha practices a cuisine where the choice of products, precision in preparation and intelligent combination of flavours is present in every dish, using mostly organic products from the Herdade and favouring local producers, always inspired by the Alentejo's gastronomic tradition and the region's culture.

The organic and self-suficient production is now a reality on the estate's 610 hectares. Our restaurant serves wines, olive oil and honey, a variety of cereals such as durum wheat and barley, oats, rye, barley, the Alentejo cow, white and black Merina sheep and the black pig, all with PDO protected designations of origin, and vegetables and fruit from the gardens and orchards that have been restored on the estate.

Joachim Koerper: Executive Chef

After starting his career in his home country, Germany, Joachim Koerper spent time in France, Spain and Brazil before arriving in Portugal, at Eleven, an award-winning restaurant. Passionate about Mediterranean cuisine, he seeks to extract the best ingredients from each terroir, bringing the indigenous aromas and textures to the fore, respecting traditional culinary techniques and reinterpreting them with the knowledge acquired from the places and food he has experienced.

Cintia Koerper: Pastery Executive Chef

Graduated in Gastronomy from Alain Ducasse Formation in Paris and Rio de Janeiro, studied Italian cuisine at Apicius in Firenze, worked with renowned chefs such as Chef Claude Troisgros, Roland Villar, Dominique Guerin. With more than 30 years of experience in cuisines in Brazil and around the world, she specializes in Italian, French and Brazilian cuisine and has been working in Portugal for 15 years. Married to Chef Joachim Koerper, she works on dessert confection at the Eleven Restaurant – 1 Michelin Star – and at Malhadinha – awarded in 2024 with the Michelin Green Star.
